Prepare the Chicken

  • Heat 2 tablespoons of olive oil in a large wok or frying pan over medium-high heat. Add the chicken pieces and cook until lightly browned and cooked through. Remove from the pan and set aside.

Sauté Aromatics and Vegetables

  • Add the remaining 1 tablespoon of olive oil to the pan. Add the sesame seeds (if using) and cook for a minute until fragrant. Add the chopped onion and sauté for about 2 minutes until softened. Stir in the garlic paste and green chili, cooking for another minute until fragrant.
  • Add the sliced mushrooms and cook until they release their moisture and start to soften, about 3-4 minutes.

Finish the Stir-fry

  • Stir in the soy sauce, fish sauce (if using), sugar, and black pepper. Add the cooked chicken back to the pan and combine everything thoroughly. Cook for a further 2-3 minutes, allowing the sauce to thicken slightly and the flavors to meld.

Serve

  • Garnish with the sliced spring onions and serve hot with rice or noodles of your choice.
