Noodles & Sauce

Vegetables

  • 2 medium Carrot peeled and chopped
  • 8-10 Beans green, trimmed and halved
  • 200 gm Mushroom sliced
  • 1 medium Onion finely chopped

Spices & Seasoning

Other

  • 3 tbsp Oil vegetable or your preferred oil
  • 3 cup Water for boiling noodles and vegetables (adjust as needed)

Instructions
 

Prepare the Vegetables

  • Chop carrots, green beans, and mushrooms. Steam the vegetables until tender-crisp. Set aside.

Cook the Noodles

  • Boil water in a separate pot. Add the millet noodles and cook according to package directions. Drain and set aside.

Make the Noodle Paste

  • In a blender, combine noodles masala, carrot and bean puree, and yogurt (if using). Blend until smooth and creamy.

Sauté Aromatics

  • Heat oil in a pan or wok over medium heat. Add chopped onions and sauté until softened.

Season the Stir-Fry

  • Add salt and turmeric powder to the pan. Stir well and cook for about 30 seconds until fragrant.

Combine and Simmer

  • Pour the noodle paste into the pan. Stir well to combine. Add the steamed vegetables and cooked noodles.
