Ingredients
Vindaloo Paste Ingredients
- 8-10 Chilies kashmiri or byadgi preferred; deseeded for less heat, dried, red
- 1/4 cup Vinegar white or malt vinegar
- 1 tsp Cumin Seeds
- 1 tsp Mustard Seeds black
- 1/2 tsp Turmeric Powder haldi
- 6-8 Peppercorns black
- 4-5 Cloves
- 1 inch Cinnamon Stick
- 2-3 Cardamom Pods seeds only, or whole pods
- 1 inch Ginger roughly chopped
- 4-5 clove Garlic roughly chopped
- 1 tsp Sugar or jaggery, optional
Instructions
Prepare the Vindaloo Paste
- Soak the dried red chilies in hot water for 15-20 minutes. Drain well. Grind the soaked chilies, vinegar, cumin seeds, mustard seeds, turmeric, peppercorns, cloves, cinnamon stick, cardamom, ginger, garlic, and sugar (if using) into a smooth paste using a blender or food processor. Add a little water if needed to achieve a smooth consistency.
Marinate the Chicken (Optional)
- In a bowl, combine the chicken with 1-2 tablespoons of the vindaloo paste and salt. Mix well and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.
Sauté Aromatics
- Heat oil or ghee in a heavy-bottomed pan or Dutch oven over medium heat. Add the finely chopped onions and sauté until soft and golden brown, about 8-10 minutes.
Cook the Masala
- Add the vindaloo paste to the pan and sauté for 5-7 minutes, stirring frequently, until the paste darkens slightly and the oil begins to separate. If using, add the chopped tomatoes and cook until softened.
Add Chicken and Potatoes
- Add the marinated chicken (and potatoes, if using) to the pan. Stir to coat well with the masala and sear the chicken for 5-7 minutes until lightly browned on all sides.
Simmer the Curry
- Add salt to taste and 1/2 cup of water (or more, as needed for desired consistency). Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is tender and cooked through, and the potatoes are soft. Stir occasionally to prevent sticking.
Rest and Serve
- Remove from heat and let the Chicken Vindaloo rest for at least 10-15 minutes before serving. This allows the flavors to meld. Garnish with fresh coriander leaves and serve hot with steamed rice, Goan poi, or crusty bread.
