Ingredients
  

  • 1/2 cup cauliflower fulgobhi
  • 1/2 cup Cabbage
  • 3-4 potatoes
  • 1 cup carrots
  • 1/2 cup bottle gourd
  • 1 capsicum
  • 1/4 beetroot optional
  • 2 tablespoon ginger garlic paste optional

For tempering :

  • 1 teaspoon Garlic paste
  • 1 /2 teaspoon Ginger paste
  • 2 Onions finely chopped
  • 4 to matoes chopped
  • 2-3 green chili finely chopped
  • 2 tablespoon Oil or butter
  • 1 teaspoon Red chili powder
  • 2 teaspoon Pav Bhaji Masala
  • 1 lemon juice or 1/2 tsp mango powder
  • 1/4 teaspoon Turmeric Powder
  • 1 teaspoon Coriander powder
  • 1-2 teaspoon Salt or as per taste

For garnish

  • 2 tbsp Coriander leaves chopped
  • 2 wedges Lemon

Instructions
 

  • Cut & wash all vegetables. Add all veggies in pressure cooker. Add 1 cup water. Cook it until 4-5 whistles on medium flame. Switch off gas.

  • Let it cool. Mash all veggies with masher.

  • Heat butter in Kadhai. Once melted add onions. Saute until translucent. Add garlic, ginger. Saute it for 1 minute.

  • Add tomatoes & green chillies. Mash all with masher. Add all dry ingredients. Saute all until gravy leaves oil.

  • Add Boiled veggies. Saute all for 4-5 minutes. Bhaji is ready.

  • Garnish with coriander leaves & lemon wedges. serve with butter pav & chopped onions.
