Ingredients
Marinade
- 150 gm Cottage Cheese cubed
- 1/4 cup Yogurt
- 1 tsp Ginger ginger-garlic paste
- 1/4 tsp Turmeric powder
- 1 tsp Chili Powder kashmiri, red
- 1/2 tsp Cumin powder, roasted
- 1 tsp Garam Masala
- 1/4 tsp Pepper black
- 1 pinch Nutmeg
- Salt to taste
- 1/2 tsp Oil
- 1 tsp Lemon Juice
- 1 Tbsp Gram Flour besan, roasted
- Food Coloring optional, red, to taste
Vegetables and Skewers
- 1 medium Bell Peppers capsicum, cut into chunks
- 1 medium Onion cut into chunks
- Skewers as needed
Instructions
- In a dry skillet, roast the gram flour (besan) over medium heat until the raw smell disappears and it becomes fragrant. This enhances its nutty flavor and helps the marinade bind better. Set aside to cool.
- In a mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, Kashmiri red chili powder, roasted cumin powder, garam masala, black pepper, nutmeg, salt, oil, and lemon juice. Whisk until well combined.
- Add the cubed paneer to the marinade. Gently mix to coat each piece evenly, ensuring the paneer absorbs the flavors without breaking.
- Cut the bell pepper and onion into bite-sized chunks. Add them to the marinated paneer and mix gently. Refrigerate for at least 30 minutes, allowing the flavors to meld and the paneer to tenderize.
- Thread the marinated paneer, bell pepper, and onion pieces onto skewers, alternating between them. Create a visually appealing arrangement for a more enticing presentation.
- Heat a skillet or griddle over medium heat. Add a small amount of oil. Place the skewers on the hot surface.
- Cook the paneer tikka, turning occasionally, until all sides are golden brown and slightly charred. This gives the paneer a delicious smoky flavor and appealing texture.
Recipe Notes
Good To Know
- For an authentic smoky flavor at home, try the 'dhungar' method: briefly place a small bowl with hot charcoal in the center of your marinated paneer, drizzle with a little ghee, and cover tightly for 3-4 minutes before grilling.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling or baking.
- Add colorful vegetables like bell peppers, onions, or cherry tomatoes to the skewers between paneer pieces for extra flavor, texture, and a visually appealing presentation.
- Leftover paneer tikka can be repurposed into wraps, sandwiches, or added to salads for a next-day meal with a burst of flavor.
Expert Tips
- Marinating the paneer for a longer period, such as overnight, allows it to absorb more flavor and become more tender.
- Don’t overcrowd the pan when cooking the paneer tikka. Ensure adequate space between pieces for even cooking and browning.
- For a richer flavor, use a combination of yogurt and cream as a base for your marinade.
Storage Instructions
- Store leftover paneer tikka in an airtight container in the refrigerator for up to 3 days.
- To reheat, gently warm in a skillet over medium heat or in the microwave.
