Ingredients
For the Paneer Tikka Marinade
- 300 gm Cottage Cheese cubed into 1-inch pieces
- 1 Bell Peppers capsicum, cubed into 1-inch pieces, medium
- 1 Onion cubed into 1-inch pieces, medium
- 1/4 cup Yogurt hung curd or greek yogurt preferred
- 1 Tbsp Gram Flour besan
- 1 tsp Corn Flour
- 1 tsp Chili Powder red
- 1/2 tsp Garlic paste
- 1/2 tsp Ginger paste
- 1/2 tsp Coriander ground
- 1/2 tsp Cumin ground
- 1/2 tsp Garam Masala
- 1/2 tsp Turmeric powder
- 1/2 tsp Salt or to taste
For the Tikka Masala Sauce
- 2 Onion medium, roughly chopped
- 5 clove Garlic
- 1 inch Ginger piece, roughly chopped
- 3 Tomato roughly chopped
- 1/4 cup Cashews
- 2 Tbsp Peanuts
- 2 Chili finely chopped, green
- 1 tsp Kashmiri Chili Powder red
- 1/2 tsp Turmeric powder
- 1 tsp Coriander ground
- 1 tsp Garam Masala
- 2 tsp Fenugreek Leaf dried, dried fenugreek leaves
- 1 Bay Leaf
- 1/4 cup Heavy Cream or hung curd/greek yogurt
- 1 1/2 tsp Salt or to taste
Instructions
- In a bowl, whisk the yogurt until smooth. This ensures a creamy marinade.
- Add all the marinade ingredients to the yogurt: chickpea flour, cornstarch, red chili powder, garlic paste, ginger paste, ground coriander, ground cumin, garam masala, turmeric powder, and salt.
- Combine the paneer, bell pepper, and onion with the marinade. Gently mix until everything is evenly coated. Marinate for at least 30 minutes, or up to an hour, in the refrigerator. This allows the flavors to meld.
- Boil the roughly chopped onions, garlic, and ginger in 1/4 cup of water for 3-4 minutes until slightly softened. This step helps create a smooth paste.
- Once cooled, blend the boiled onion mixture with cashews and peanuts into a smooth paste. Separately, blend the tomatoes and green chilies into another smooth paste.
- Heat oil in a large pan or kadai. Sauté the onion-nut paste until it releases oil and turns golden brown. This builds a rich flavor base.
- Add the tomato-chili paste to the pan and sauté until the oil separates. This deepens the color and flavor of the sauce.
- Stir in the Kashmiri red chili powder, turmeric powder, ground coriander, salt, garam masala, and kasuri methi. Sauté for 1 minute until fragrant.
- Add 1 1/2 cups of water to the sauce and bring to a boil. Reduce heat and simmer. Stir in the heavy cream or hung curd. Continue simmering until the sauce thickens slightly.
- In a separate pan, heat oil and pan-fry or bake the marinated paneer until golden brown on all sides. For pan-frying, cook over medium-high heat. For baking, arrange on a baking sheet and bake at 400°F (200°C) for 15-20 minutes, flipping halfway.
- Add the pan-fried/baked paneer, bell pepper, and onion to the simmering sauce. Cook for 2-3 minutes until heated through.
- Garnish with fresh coriander. Serve hot with butter naan or tandoori roti.
