Winter is on the way, this is the time people are searching different types of dessert. I am here with sweet potato and dates jeggery. It is seasonal veg preparation. Dates jeggery prevents anaemia because it has minerals, iron and folate. However it is far better than white sugar. This is an easy homemade recipe.
1 cup boiled mashed sweet potatoes
1/4 cup coconut powder
2 tbsp milk powder
2 tbsp grated nuts
1 tsp green cardamon powder
1 bowl jeggery syrup
Oil for frying
1 tsp rose water
1 tbsp refine flour for binding
Mashed the boiled sweet potato with refine flour. There should not be any lump. It will be a smooth dough.
Now make small shaped and keep aside.
Now make the dry fillings adding coconut powder, grated nuts, milk powder and green cardamom powder.
Now each small dough stuffed with 1 tbsp dry fillings.
Ali sides properly closed fillings should not come out.
After filling keep in fridge for 10 minutes.
Now heat refine oil and start frying.
Turn other side, both sides should be light brown.
Take out from oil keep separate.
Dip into the jeggery syrup. Add rose syrup.
It can serve hot or cool. Can be kept 2 weeks.
