Pineapple Mint Agua Fresca

Ingredients
- Pineapple peeled and cut into 1-inch chunks - 1 medium sized
- Sugar or honey or any other sweetener to taste I used fine white cane sugar- 1/4 cup
- Water - 2 cups
- Fresh mint leaves - 1/8 cup plus additional for garnish
- Juice of 1 lime
Instructions
- Combine sugar and pineapple in a bowl, cover and refrigerate for one hour.
- After an hour, add the pineapple mixture, water, mint, and lime juice to a blender. Blend on high until smooth.
- Pour liquid through strainer into a pitcher, pressing on the solids.
- Serve over ice and garnish with a slice of pineapple an some fresh mint leaves.
