Oats & Almonds Dark Chocolate Truffle

Chocolate truffle is one of the kids all time favorite and mine too 😉 You can make them very easily at home using healthy ingredients and enjoy a guilt free truffle. Oats & Almonds Dark chocolate truffle is made using quick cooking oats, almond meal, honey and dark chocolate.

Ingredients
- ½ cup tightly packed almond meal
- 1/8 cup unsweetened cocoa powder
- A pinch of salt
- ¼ cup – 1 tbsp honey
- ½ cup quick cooking oats
- 1/8 cup desiccated coconut
- 1 cup dark chocolate chips
- 1 tbsp unsalted butter room temperature
- 2 tbsp milk room temperature

Instructions
- Blend ½ cup to ¾ cup of whole almonds to a fine powder and take ½ cup tightly packed almond meal from the ground powder.
- Dry roast oats and allow it to cool.
- Place the almond meal, cocoa powder, salt, roasted oats in a blender and pulse it few times until well mixed.
- Add honey and blend once or twice.
- Transfer it to a bowl, knead for a minute or two and make small balls out of it.
- Freeze the balls for 30 minutes .
- Take the chocolate chips and butter in a microwave safe bowl and microwave on high in 30 second intervals for 2 times and mix thoroughly.
- Add milk and microwave for 20 more seconds and give a gentle mix until the chocolate chips are melted completely.
- Take the frozen balls out of the refrigerator and using two spoons coat all the balls with the slightly hot melted chocolate.
- Place them on the parchment sheet
- Sprinkle generous pinch of desiccated coconut and refrigerate for 15 minutes
- Transfer each ball to a mini cup cake liner and serve.
Notes
Chocolate chips can be melted using double boiler method too.
