Ingredients

- 1/4 cup Beet Greens chopped, with stems
- 1/2 cup Vegetables chopped (e.g., eggplant), green, green beans, mixed, potato
- 1 Chili green, slit lengthwise
- 1 medium Tomato chopped

- 1 tsp Panch Phoron
- 1 tsp Turmeric Powder
- 1 tsp Cumin Seeds
- 1 tsp Masala five-spice, roasted

- 1 tsp Ginger Paste
- Salt to taste
- 2 tbsp Mustard Oil
Instructions
- Heat the mustard oil in a pan over medium heat. This oil has a high smoke point, making it ideal for Indian cooking.
- Add the panch phoron and let it sizzle for a few seconds to release its aroma. Then, add the ginger paste and cumin seeds. Sauté until fragrant.
- Add the chopped mixed green vegetables and beet greens with stems to the pan. Stir well to combine.
- Add the turmeric powder, salt, green chili, chopped tomato, and roasted five-spice masala. Mix thoroughly, ensuring the vegetables are coated in the spices.
- Reduce the heat to low, cover the pan, and simmer for 10 minutes, or until the vegetables are tender. Covering the pan traps steam and helps the vegetables cook evenly.
- Remove the lid and check the consistency of the curry. If needed, simmer uncovered for a few more minutes to reduce excess moisture. The curry should be vibrant and flavorful.
- Serve hot with khichdi, steamed rice, chapati, or paratha.
