  • Heat the mustard oil in a pan over medium heat. This oil has a high smoke point, making it ideal for Indian cooking.

  • Add the panch phoron and let it sizzle for a few seconds to release its aroma. Then, add the ginger paste and cumin seeds. Sauté until fragrant.
  • Add the chopped mixed green vegetables and beet greens with stems to the pan. Stir well to combine.
  • Add the turmeric powder, salt, green chili, chopped tomato, and roasted five-spice masala. Mix thoroughly, ensuring the vegetables are coated in the spices.
