  • 1 tsp Honey optional, for extra sweetness. maple syrup or date syrup can be substituted.

Prepare the Sesame Seeds

  • Dry roast the sesame seeds in a dry skillet over medium heat, stirring frequently, until lightly golden brown. Let cool completely.

Combine Ingredients

  • Mix the cooled sesame seeds with the pumpkin seeds in a medium bowl.
  • In a separate bowl, mash the banana with a fork until smooth. Add the honey (if using) and mix well.
  • Combine the mashed banana mixture with the seed mixture. Mix thoroughly until a dough forms.

Bake the Cookies

  • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Drop rounded tablespoons of the cookie dough onto the prepared baking sheet, leaving some space between each cookie.
  • Bake for 10-12 minutes, or until the edges are golden brown and the cookies are firm to the touch.
