Mutton Chukka is a Chettinad cuisine from Chettinad region of Tamil Nadu state in South India.The word chukka means 'Dry Curry'. Mutton Chukka is well known for its spiciness. Ingredients
- 400 gm Mutton cubes, preferably boneless
- 2 tbsp Oil
- 1 tsp cumin seed
- 1 Cinnamon small stick
- 3 Cardamom
- 3 Cloves
- 1 Bay leaf small
- 1 Onion large, chopped finely
- 1 Tomato large, chopped finely
- 3 Dry Red Chili or as per your heat preference
- 2 tsp Ginger garlic paste
- 1 tsp Turmeric Powder
- ½ tsp Cumin powder
- 1 tsp Coriander Powder
- 1 tsp Fennel powder
- 1 tsp Chilly powder
- 1 tsp Garam Masala
- 1 tsp Pepper powder
- 1 sprig Curry Leaves
- Salt to taste
- Water as required
- 2 tbsp Coriander chopped

Instructions
- In a pan heat the oil. Add in the cumin seeds, cinnamon, cardamon, Cloves and the Bay leaf. Let it crackle.
- Add in onions, dry chilies, ginger garlic paste, curry leaves and sauté for about 2 mins.
- Add mutton, salt to taste and mix well.
- Cover the pan and cook in medium heat for 10-15 mins till the water released by the mutton dries up.
- Add chopped tomatoes and cook till it turns mushy.
- Add the Turmeric powder, cumin powder, fennel powder, garam masala powder, chilly powder and pepper powder, mix well and cook for about a min.
- Add water, cover the pan and cook on medium heat till the mutton is cooked completely. Mine took about 40-45 mins. Cooking time will differ upon the quality of meat. Add water little at a time and cook till done completely.
- Add chopped coriander leaves, cook for a min and take off the heat.
