Chicken Chukka (Pan Roasted Chicken ) With Nutritional Facts

Chicken chukka is one of my favorite, the chicken is roasted with spices making it aromatic and full of flavors. It is an traditional recipe from Tamil Nadu, a southern state in India.
This recipe is usually prepared with chicken with bones on, but you could also use the same method with boneless chicken. I cut the whole chicken into small pieces.
I used about one pound of chicken. The chicken is first marinated with the required salt and a pinch of turmeric.

Ingredients
  

  • 1 pound Chicken pieces
  • 1 Bay leaf
  • 4 Cloves
  • 1 inch Cinnamon
  • 3 Green cardamom
  • 1 tsp Cumin seeds
  • 1 Star anise
  • 2 tsp Red chili powder moderate or mild
  • 1 tbsp Ginger garlic paste
  • 1/2 tsp Garam masala
  • 4 to 5 Curry leaves few for tempering
  • 2 tbsp Oil

Instructions
 

  • Heat the pan with oil, once the oil is hot, add in the bay leaf, cloves, cinnamon, cardamom, star anise, cumin seeds fry for few seconds.
  • Add chopped onions and sauté well. Sauté till golden brown. Add ginger garlic paste and cook a bit.
  • Add chicken, turmeric powder, garam masala, red chili powder, salt and sauté well.
  • Cook for 1-2 minutes.
  • Cover the pan and cook for 4-5 minutes on high flame, switch to low flame until the masala is dry and the oil separates from the masala.
  • Garnish with coriander and curry leaves.
