The aloo poori is a favorite dish at my home for sunday morning breakfast.Simple spicy potato curry served with puris,the rajathani aloo puri is one of favorite foods for everyone.specialy all the mother's.

Ingredients
  

  • 2 tbsp oil
  • 2 teaspoon Ginger garlic paste
  • 2 green chilli chopped
  • 1 cup tomato paste
  • 1/2 teaspoon salt as to taste
  • 11/2 teaspoon red chilli powder
  • 1/4 teaspoon turmuric pwr
  • 2 teaspoon coriander powder
  • 1 glass water
  • 1/2 teaspoon garam masala
  • 1 teaspoon dry fenugreek leaves
  • 2 tbsp coriender leaves
  • 1/2 teaspoon cumin seed
  • 1/4 teaspoon asafoedia
  • 1 bay leaves
  • 1 small stick cinnamon
  • 2 green cardamom
  • 5-6 boiled potatoes
  • 2-3 garlic
  • 1 teaspoon degi mirch
  • For ajwain methi puri : 1 cup wheat flour
  • 5-6 tbsp gram flour
  • 3-4 tbsp semalina
  • 1/4 teaspoon Salt
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon pinch of turmuric pwr
  • 3 tbsp dry fenugreek leaves
  • 1/2 teaspoon ajwain
  • 1/4 cup coriander leaves
  • 1 teaspoon carom seeds
  • 3 tbsp oil deep fry

Instructions
 

  • Wash and chop ginger,green chillies and garlic. Boil and peel the potatoes then roughly mash them with hands. Make tomato paste by adding some water.
  • In a wok,put oil,add all dry masala and saute it for few secs. Now add garlic,ginger and saute until it becomes light brown.
  • Add green chillies,tomato paste,all spices,kasuri methi and mix well. Saute it until the oil seperates out.
  • Now add mashed potatoes and mix well.
  • Add 1.5 glass of water and mix well. Cook it at low flame so that gravy become thick.(don't add much water because we have to make masaledar thick aloo)
  • When the gravy becomes thick,add garam masala and garnish with coriander leaves.

  • Puri : In a bowl,put all ingredients and mix well. Make a dough by adding sufficient water,apply some oil and keep aside for 10-15 min.
  • Make the dough in shape of small sphere and deep fry it in sufficient oil until it becomes golden brown Keep it on tissue paper.

  • Spicy aalo puri is ready. Serve it with sliced onion,mango pickle and green chilly.
