Potato souffle is a baked egg dish and is 8baked till it puffs up. Potato souffle is light cheesy dish .

Ingredients
- 150 gms mashed boiled potato with no lumps
- 2 egg yolk and white separated
- Pinch of cream of tartar
- 1 tablespoon chopped parsley
- Salt and pepper to taste
- 2 tablespoon grated processed cheese
- 2 tablespoon bread crumbs
- 2 tablespoon mozrella cheese
- 1 teaspoon chilli flakes
- 1/2 teaspoon paprika powder
- Few basil leaves
- 1 tablespoon butter + 1 tsp for greasing ramekein
- 1 tablespoon flour
- 1/2 cup milk

Instructions
- In a bowl mix egg yolk , mashed potato,chopped parseley, chopped basil.Saltand pepper ,chilli flakes , both cheese and mix well
- Now heat butter in a pan To this add flour and cook
- Now switch off flame and slowly add milk to it. Whisk well. Again put on fire and cook for 3-4 mins. Let it cool down.
- Add this batter to potato egg yolk mixture and mix well
- Now in another clean bowl whisk legg white .Add cream.of tartar and whisk till stiff peaks forms.
- Now gently fold potato mixture in egg white
- Grease ramekein mould and coat with bread crumbs.
- Fill potato mixture in it
- Bake in a preheated oven at 180 degree for 30 mins or till it puffs up
- Sprinkle paprika powder and chopped parsley and serve hot
Notes
- Beat eggwhite fluffy to make souffle light.
- Add cream of tartar while beating egg white to hold egg white
- Potato should be lump free to make souffle light .
