Sandesh is a delicious Bengali sweet popular all over India and abroad. To make sandesh, it is always good to use fresh chena or paneer that is still moist. Sandesh made by using paneer, powdered sugar and green cardamom powder. Without garnishing also it is good but I have given a fish shaped and garnish with dry nuts.
1 litre milk
1 tbsp lemon juice
2 tbsp powdered sugar
1/2 green cardamom powder
Bring the milk to boil.
Mix same quantity of water with lemon juice.
Let the boiling milk little cool down then add half of diluted lemon juice slowly with milk.
Again pour the remaining lemon juice and mix.
Now you can see water is separated. Now strain the chena with maslin cloth, press with palm or finger tips.
Add powdered sugar and green cardamom powder.
Heat a pan just saute the chena for a few minutes with low flame.
Let it cool then give shape as you like.
Without garnishing also it is good and delicious
