First soak urad dal into enough water for about 4 hours. Wash and drain all the water.
Now in grinder grind dal using little water and make a fine paste .
Now take dal batter and beat it well with hands with hand beater until batter becomes fluffy.now in a dal batter add chopped fenugreek leaves ,ginger green chilli paste ,cumin seeds and salt as per taste. Mix well .
Now on palm apply some water and take small portion of batter and flat it with fingers and make small hole in a center.
Fry these vadas into medium hot oil until they becomes golden brown .
Maithi medu vadas are ready. Serve with coconut chutney .
You can use spinach leaves also instead of maithi leaves .
