Medu vadas are staple food of South india region. As winter is going on so I have added maithi (fenugreek leaves) to the vadas and gave it a nice twist .

Ingredients
  

  • 1 cup urad dal split
  • 1 cup methi fenugreek leaves, finely chopped
  • 2 teaspoon ginger chili paste
  • 1-2 tsp Salt or as per taste
  • 1 teaspoon cumin seeds
  • Oil for frying

Instructions
 

  • First, soak urad dal in enough water for about 4 hours. Wash and drain all the water.
  • Now, in the grinder, grind the dal using a little water to make a fine paste.

  • Now, take the dal batter and beat it well with a hand beater until the batter becomes fluffy. Add chopped fenugreek leaves, ginger-green chilli paste, cumin seeds, and salt to taste. Mix thoroughly.

  • Now, wet your palm, take a small portion of the batter, flatten it with your fingers, and create a small hole in the center.

  • Fry these vadas in medium-hot oil until they become golden brown.

  • Maithi medu vadas are ready. Serve with coconut chutney .

Notes

  • You can use spinach leaves also instead of maithi leaves.
