50 – 50 Sweet Lime Pickle

Instructions
- Wash the lemons thoroughly, pat dry with a clean cloth so that there is no moisture left.
- Slit in 4 pieces like a flower without removing the bottom.
- Take a glass jar, wash it thoroughly with hot water and dry it (Keep it in sunlight for 1 -2 hours). This is one of the most important steps while making any pickle as the jar should not contain any moisture.
- Add Sugar and Salt and cut lemon pieces.
- Mix the pieces, shake them and put them in the Jar.
- Keep it in sun for 3-4 days.
- Leave the pickle for another 10 days and don't forget to shake it everyday, always use a dry spoon and don't allow moisture to get in.
- Enjoy your pickle with snacks like Mathari or during meals.
Notes
- Glass jar should always be dry. Its good to keep it in sunlight before puting the pickle.
- Keep the pickle away from moisture and use a dry spoon while taking it out from the jar.
but we have to leave lemons in salt for minimum 10 days to soften the peel.
