Yield / Serves
1 kg potato
Oil for deep frying
Salt to taste
Cut potatoes into sticks or wedges
Place potato sticks in a bowl
Cover with cold water
Allow potatoes to soak for about one hour
Heat to oil in a pan
Remove potatoes from the water Pat dry
Carefully place some of the potato sticks into hot oil
You'll need to do several, smaller batches for best results
Stir occasionally and watch for that golden brown
Once finished, remove from hot oil and place on paper-towel
Generously toss with sea salt and serve immediately
