Instructions
- Make a dough with fenugreek leaves, flour, salt and curd. Then make soft paratha.
- Serve with fried brinjal.
Recipe Notes
Fenugreek leaves has a bitter taste so it is good combination with brinjal.
Additional Tips
- For an extra boost of flavor, sauté the fenugreek leaves briefly with a pinch of cumin seeds and minced green chili before mixing into the dough—this reduces any bitterness and enhances the paratha’s aroma.
- If you prefer a softer paratha, let the dough rest for at least 30 minutes covered with a damp cloth; this allows the gluten to relax and makes rolling the parathas easier.
- To make these parathas vegan, substitute the yogurt with a plant-based yogurt or simply use a mix of water and a teaspoon of lemon juice for a similar tang and softness in the dough.
- Leftover parathas can be stored in an airtight container and reheated on a skillet with a splash of water and a lid to retain softness—ideal for quick breakfasts throughout the week.
