Ingredients
Barfi Base
- 2 cup Desiccated Coconut
- 400 gm Sweetened Milk condensed
- 1 tsp Cardamom ground

Instructions
- In a heavy-bottomed pan or saucepan, combine the sweetened condensed milk. A heavy-bottomed pan ensures even heat distribution, preventing scorching.
- Simmer the condensed milk gently over low heat for 1 minute, stirring constantly. This will slightly thicken the milk.
- Add the desiccated coconut and mix well, ensuring it's fully incorporated into the condensed milk. Continue to cook over low heat. Low heat prevents burning and ensures the barfi cooks evenly.
- Stir the mixture constantly until it thickens and starts to pull away from the sides of the pan. This indicates that the coconut has absorbed the moisture and the barfi is ready to set.
- Add the ground cardamom and fold it in gently. Cardamom adds a beautiful aromatic touch to the barfi.
- Remove the pan from the heat and let the mixture cool slightly. This will make it easier to handle.
- Line a tray or baking dish with aluminum foil or parchment paper and grease it lightly. This will prevent the barfi from sticking.
- Transfer the coconut mixture to the prepared tray and spread it evenly using a spatula or the back of a spoon. Aim for a uniform thickness.
- Garnish the surface with chopped pistachios. This adds a lovely crunch and visual appeal.
