Ingredients
For the Barfi
- 250 gm Mawa also known as mawa. can be found in indian grocery stores.
- 1 tbsp Ghee clarified butter
- 125 ml Milk approximately 1/2 cup
- 125 gm Sugar granulated sugar; approximately 1/2 cup
- 2 tbsp Cocoa Powder unsweetened cocoa powder for intense chocolate flavor
- 1/4 tsp Food Coloring optional, for a deeper chocolate color. brown gel food coloring is recommended.
For Garnishing
- 1/4 cup Nuts chopped; such as pistachios, almonds, cashews, mixed
- 1/4 cup Melon Seeds also known as watermelon seeds; chopped
Instructions
Prepare the Khoya
- Grate or mash the khoya to a smooth consistency.
Melt the Ghee and Combine Ingredients
- In a heavy-bottomed pan or kadai, melt the ghee over low heat. Add the grated khoya, milk, sugar, and cocoa powder. Stir continuously until the sugar dissolves completely and the mixture is well combined.
Cook the Barfi
- Continue to cook the mixture on the lowest heat for 5-7 minutes, stirring constantly. The mixture will start to thicken and come together. Add the optional food coloring during this step.
Set and Garnish
- Once the barfi is thick enough to hold its shape, remove from heat. Immediately pour the mixture onto a greased plate or tray. Spread it evenly to an approximately 1/2 inch thickness.
- Garnish generously with chopped nuts and melon seeds.
Cool and Cut
- Allow the barfi to cool and set completely at room temperature for at least 2-3 hours, or until firm. Once set, cut into desired shapes using a sharp knife.
Store and Serve
- Store the barfi in an airtight container at room temperature for up to 3 days.
