Ingredients
 

For the Coconut Mixture

  • 2 Coconuts fresh, grated (approximately 4 cups grated coconut), medium-sized
  • 1 cup Sugar granulated
  • 1 cup Water
  • 2 tsp Ghee clarified butter

Prepare the Pan

  • Grease a large thali (plate), aluminum tray, or baking dish with a few drops of ghee.

Make the Sugar Syrup

  • In a heavy-bottomed pan or kadhai, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Continue to cook, without stirring, until the syrup reaches the one-string consistency (a thin thread forms when you lift a little syrup with a spoon).

Cook the Coconut Mixture

  • Add the grated coconut to the sugar syrup. Reduce the heat to medium-low. Stir continuously and thoroughly to prevent burning. The mixture will start to thicken.

Add Ghee and Thicken

  • Stir in the ghee. Continue to stir until the mixture becomes thick and slightly frothy. Maintain a medium-low heat throughout the process.

Add Flavorings

  • Remove from heat. Stir in the cardamom powder and rose water, mixing well to combine.

Set and Cool

  • Immediately pour the mixture into the prepared greased thali or tray. Spread it evenly to an even thickness. Allow the barfi to cool completely at room temperature (at least 30 minutes) before cutting.

Cut and Serve

  • Once completely cool, cut the barfi into small, diamond-shaped pieces. Store in an airtight container in the refrigerator for up to a week.
