Ingredients

- 1 cup Desiccated Coconut
- 1/2 cup Cashews whole or roughly chopped
- 2 tbsp Ghee clarified butter; increases flavor and sheen.
- 1/4 tsp Cardamom Powder adds a lovely aroma and flavor., optional
Instructions
Prepare the Bread Crumb Mixture
- Grind the bread slices into fine crumbs using a food processor or blender. In a bowl, combine the bread crumbs, grated carrots, and milk. Mix well and let it soak for 15-20 minutes to allow the bread to absorb the milk.
Cook the Barfi
- In a heavy-bottomed pan or kadai, melt the sugar over medium heat. Stir constantly until the sugar dissolves completely and starts to caramelize slightly.
- Add the desiccated coconut and continue to cook, stirring frequently, until the mixture turns a light golden brown. This takes about 5-7 minutes.
- Add the soaked bread and carrot mixture to the pan. Stir continuously with a spatula to prevent sticking and to ensure even cooking. Cook for 10-12 minutes, until the mixture thickens and starts to leave the sides of the pan.
- Stir in the ghee and cardamom powder (if using) and cook for another 2-3 minutes. The mixture should be thick and cohesive.
Set and Cut the Barfi
- Lightly grease a flat, rectangular dish with ghee. Pour the hot barfi mixture into the dish and spread it evenly. Sprinkle with chopped cashews.
- Let the barfi cool down completely to room temperature. Once cooled, refrigerate for at least 20-30 minutes to firm up.
- Cut the barfi into small, square pieces using a sharp knife. Store in an airtight container at room temperature for up to 3-4 days or in the refrigerator for longer storage.
