Ingredients
For the Green Pea Paste:
- 1 cup Peas fresh green peas can be used; adjust cooking time accordingly., frozen, green
For the Barfi:
- 1/4 cup Sesame Seeds toasted for enhanced flavor.
- 1/2 cup Cashews raw, unsalted cashews. can be finely chopped or ground into a paste.
- 1/4 cup Coconut Sugar
- 1 tsp Rose Water
- 1/4 cup Ghee homemade or store-bought; use good quality ghee for best flavor.
- 1/4 tsp Salt pinch of salt enhances flavors
Instructions
Prepare the Green Pea Paste
- Wash and steam the frozen green peas until tender. Once cool, blend into a smooth paste using a food processor or blender.
Make the Barfi
- Heat the ghee in a non-stick pan over medium heat. Add the green pea paste and stir continuously until it thickens and starts to dry out. This may take 15-20 minutes. Add a pinch of salt.
Combine Ingredients
- Add the cashews (chopped or as a paste), sesame seeds, coconut sugar, and rose water to the pan. Mix well and continue to stir until the mixture is fragrant and comes together, about 5-7 minutes.
Set and Serve
- Lightly grease a small square or rectangular mold (approximately 6x6 inches) with ghee. Pour the barfi mixture into the mold and spread evenly. Sprinkle with remaining sesame seeds (optional). Let it cool and set completely at room temperature for at least 30 minutes or until firm.
Cut and Enjoy
- Once set, cut the green pea barfi into small squares and serve. Store in an airtight container in the refrigerator.
