Instructions
Roast and Prepare the Peanuts
- Dry roast the peanuts in a pan over medium heat until fragrant and lightly browned. Let them cool slightly, then rub them vigorously in a clean towel to remove the skins. Set aside.
Grind the Peanuts
- Grind the roasted peanuts into a coarse powder using a food processor or blender. Work in batches to avoid overheating the nuts.
Combine Peanuts and Jaggery
- Break the jaggery into small pieces. In a food processor, combine approximately 80g of jaggery and 100g of ground peanuts. Pulse until well combined but not completely smooth (leaving some texture). You want to avoid over-processing which would release oils. Transfer this mixture to a plate. Repeat the process with the remaining peanuts and jaggery.
Shape the Ladoos
- If using, add cardamom powder to the peanut-jaggery mixture. With slightly wet hands, roll the mixture into small balls (approximately 1-inch in diameter).
Enjoy!
- Store your ladoos in an airtight container at room temperature for up to 10 days.
Recipe Notes
Expert Tips
- For easier skin removal, lightly toast the peanuts before rubbing.
- If the mixture is too dry to form balls, add a teaspoon or two of warm water or milk.
- Experiment with adding other spices like nutmeg or ginger for unique flavor variations.
- For a smoother ladoo, increase the pulse time in the food processor, but be mindful of releasing too much oil.
