- 1 cup Gram Flour coarse
- 1/4 cup Milk
- 3/4 cup Water
- pinch Food Coloring orange
- 2-3 tbsp Melon Seeds
- 1 cup Sugar
- 1 cup Water to make syrup
- 1/2 tsp Cardamom Powder
- 2-3 drops Lemon Juice
- Clarified Butter to fry
Instructions
Prepare the Boondi Batter
- Combine gram flour, milk, water, and orange food coloring in a bowl. Whisk until a smooth, thick batter forms. Ensure there are no lumps.
Fry the Boondi
- Heat ghee in a heavy-bottomed pan or kadai over medium heat. Using a perforated spoon or ladle, carefully pour small amounts of batter into the hot ghee. Let the boondi cook until golden and crisp.
- Remove the boondi with a slotted spoon and drain on paper towels to absorb excess ghee.
- Repeat until all the batter is used. Set aside.
Make the Sugar Syrup
- In a separate pan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.
- Bring the mixture to a boil, then continue to simmer until it reaches the one-string consistency (a thin thread forms when you lift a drop of the syrup between your fingers).
- Remove from heat, and stir in cardamom powder and lemon juice.
