Ingredients
For the Boondi
- 1 cup Gram Flour also known as besan., besan
- 1 1/2 cup Clarified Butter or vegetable oil for frying. use enough to deep fry the boondi.
- 1 cup + 2 tbsp Water adjust as needed to reach a pourable batter consistency.
- 1/2 tsp Food Coloring optional; saffron (kesar) can be used for a natural yellow color., orange or red
For the Sugar Syrup
- 1 cup Sugar
- 3/4 cup Water
- 1 tbsp Rose Water
- 9 Cardamom Pods lightly crushed
For Garnishing
- 1/4 cup Almonds finely chopped
- 1/4 cup Pistachios finely sliced
- Few Rose Petals for garnish
- 1 tbsp Clarified Butter for coating the ladoos., melted
Instructions
Prepare the Sugar Syrup
- Heat sugar and water in a pan. Bring to a boil, stirring until sugar dissolves. Add rose water and crushed cardamom pods. Simmer until the syrup reaches a one-string consistency (a thin thread forms when you lift a spoonful).
Make the Boondi
- In a bowl, whisk together gram flour, a pinch of food coloring (if using), and enough water to create a smooth, pourable batter.
- Heat ghee in a wide, deep pan. Using a perforated ladle or spoon, carefully pour small drops of batter into the hot ghee. Do not pour from a height to keep them perfectly round and soft. Fry until golden and slightly crisp. Remove with a slotted spoon and drain on paper towels.
- Add the boondi to the sugar syrup immediately. Stir gently to ensure they're fully coated. Let the boondi soak in the syrup for at least one hour, or until it has absorbed most of the syrup.
Make the Ladoos
- After an hour, gently mix the boondi. Grease your palms with ghee. Take a small portion of the boondi mixture, roll into balls, and shape them into ladoos. Alternatively, if you find it difficult to roll by hand, lightly crush the boondi in a food processor then shape the ladoos.
- Garnish with chopped nuts and rose petals. Serve immediately or store in an airtight container.
