Ingredients
Mutton & Vegetables
- 500 gm Mutton cut into 2-inch pieces, with bones
- 300 gm Ridge Gourd tori, peeled and cut into 1-inch cubes
- 2 Onions finely chopped (approx. 100g), medium-sized
Spices & Aromatics
- 1 tbsp Ginger-Garlic Paste
- 1 tsp Chili Powder
- 1/4 tsp Turmeric Powder haldi
- 2 tsp Cumin Seeds
- 1/4 tsp Mustard Seeds rai
- 1/4 tsp Fenugreek Seeds methi dana
- 1 tbsp Curry Leaves fresh
Instructions
Prepare the Mutton
- Clean and cut the mutton into 2-inch pieces. Pressure cook the mutton with 1/4 tsp turmeric powder, 1 tsp chili powder, salt, and 1 cup of water for 3 whistles. Set aside.
Prepare the Spice Paste
- In a blender, combine the grated coconut and cumin seeds. Add a little water and blend into a smooth paste.
Sauté Aromatics
- Heat oil in a kadai (wok). Add mustard seeds and fenugreek seeds. Once they splutter, add curry leaves and sauté briefly.
Cook the Onions and Spices
- Add the chopped onions and ginger-garlic paste. Sauté until the onions become translucent.
Add Spice Paste and Ridge Gourd
- Add the coconut-cumin paste and cook until the raw smell disappears. Add the ridge gourd, a pinch of salt, and a little turmeric powder. Cook for a few minutes and add 1 cup of water. Bring to a boil.
Combine and Simmer
- Add the boiled mutton and the remaining water. Sprinkle the remaining chili powder. Cover and simmer until the ridge gourd is tender and the curry has thickened, and oil separates on top.
Serve
- Serve hot with steamed rice, dosa, or chapathi.
