Ingredients
For the Turai Kabab Mixture
- 250 gm Ridge Gourd scrubbed clean, turai, skin mostly on; cut into small pieces
- 150 gm Split Chickpea split chickpeas
- 0.75 tsp Cumin Seeds zeera
- 9 Peppercorns black
- 1 Cardamom black
- 5 Cloves
- 2 Bay Leaves
- 2 sticks Cinnamon
- 3 Chilies dried, red
- 1.5 tsp Salt adjust to taste
- 8 pod Garlic
- 2 inch Ginger
- 3/4 cup Water
For Shaping and Frying
- 2 Onions finely chopped, medium
- 3 Chilies finely chopped, green
- 2 tbsp Coriander finely chopped
- 1/2 cup Breadcrumb fresh or panko
- 2 tbsp Oil for shallow frying
Instructions
Prepare the Spice Mixture
- Wash the ridge gourd and scrub the skin. Cut it into small pieces. Combine the ridge gourd, chana dal, red chilies, ginger, garlic, salt, black peppercorns, black cardamom, cloves, cinnamon, cumin seeds, and bay leaves in a pot. Add water and cook on medium heat until the dal is soft and the water is fully absorbed.
Grind and Mix
- Let the mixture cool completely. Grind it into a smooth paste using a food processor or blender.
Shape the Kababs
- Add the chopped onions, coriander leaves, green chilies, and bread crumbs to the ground mixture. Mix well with your hands until thoroughly combined. Shape the mixture into small, round patties or tikkis.
Fry the Kababs
- Heat oil in a flat pan or tawa over medium heat. Shallow fry the kababs until golden brown and crispy on both sides. Serve hot.
