Ingredients
 

Ridge Gourd Preparation

Spices & Aromatics

  • 1/4 tsp Asafoetida hing
  • 5-7 Chilies adjust to your spice preference, dried, red
  • 1/4 cup Coriander dhania, roughly chopped

Lentils & Other Ingredients

  • 3 tbsp Pigeon Pea split pigeon peas
  • 1 Tamarind about the size of a cherry; or 1 tsp tamarind paste, small ball
  • 2 tbsp Cooking Oil vegetable or coconut oil
  • 1/2 - 1 tsp Salt or to taste

Instructions
 

Preparing the Ridge Gourd

  • Peel the ridge gourd and cut it into small, bite-sized cubes.

Sautéing the Dal and Spices

  • Heat the cooking oil in a pan over medium heat. Add the toor dal, asafoetida, and red chilies. Sauté for 2-3 minutes until the dal turns lightly golden.

Combining Ingredients

  • Add the cubed ridge gourd, tamarind (or paste), and chopped coriander leaves to the pan. Stir well and sauté for another 5 minutes, or until the ridge gourd softens and releases some water.

Grinding the Chutney

  • Remove the mixture from the pan and allow it to cool completely. Once cool, transfer it to a blender or food processor and blend until you achieve a smooth paste. Add a little water if needed to reach desired consistency.

Serving Suggestions

  • Season with salt to taste. For an optional tempering, heat a small amount of oil in a pan, add mustard seeds, let them splutter, and pour over the chutney. Serve hot with idli, dosa, paratha, or rice and ghee.
