Instructions

Preparation

  • Peel and chop the ridge gourd and potatoes into 1-inch cubes. Set aside.

Tempering the Spices

  • Heat oil in a kadai (wok or deep pan) over medium heat. Add mustard seeds and cumin seeds. Once they begin to splutter, add the chopped green chilies, curry leaves, and minced garlic. Sauté for about 30 seconds until fragrant.

Cooking the Vegetables

  • Add the potato and ridge gourd cubes to the kadai. Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the vegetables evenly.

Simmering the Curry

  • Pour in 2 cups of water. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the potatoes are tender. Stir occasionally and add more water if necessary to maintain a consistent consistency.

Finishing Touches

  • Once the potatoes are cooked, stir in the sugar. Increase the heat to medium-high and cook for another 2 minutes to allow the sauce to slightly thicken. Garnish with chopped fresh coriander leaves and curry leaves.

Serving

  • Serve hot with steamed rice or roti.

Recipe Notes

Expert Tips for the Best Aloo Turiya Masala

  • For a richer flavor, lightly sauté the spices (turmeric, chili, and coriander powders) in the oil before adding the vegetables.
  • Adjust the amount of green chilies according to your spice preference. If you prefer a milder curry, use fewer chilies.
  • If you want a creamier curry, stir in a tablespoon of coconut milk or heavy cream at the end.
  • Adding a squeeze of lemon juice just before serving brightens the flavors and adds a nice tanginess.
