Ingredients
For the Kheer
- 1-2 tsp Clarified Butter or butter
- 4 Dates pitted and chopped
- 9-10 Golden Raisins
- 10-12 Almonds slivered
- 10-12 Cashews split
- 2 1/2 cup Milk whole or skimmed
- 1/4 cup Sugar adjust to taste, brown, or granulated sugar
- 1/4 tsp Cardamom ground
- Pinch Saffron optional, strands
Instructions
- Rinse the quinoa thoroughly under cold running water until the water runs clear. This removes the bitter saponin coating.
- In a saucepan, combine the rinsed quinoa and water. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is translucent and the water is absorbed.
- Fluff the cooked quinoa with a fork and set aside.
- In a large, thick-bottomed pot or Dutch oven, melt the ghee over medium-high heat.
- Separately toast the dates, raisins, almonds, and cashews in the ghee until golden brown and fragrant. Set aside.
- Add the cooked quinoa to the pot, followed by the milk, saffron (if using), brown sugar, and cardamom.
- Bring the mixture to a boil, then reduce heat and simmer, stirring frequently, until the kheer thickens and reduces by about one-third. This prevents the milk from scorching.
- Stir in the toasted nuts and dates, reserving some for garnish.
- Serve the kheer warm or chilled, garnished with the reserved toasted nuts and dates.
