- 1/2 cup Pearl Barley soaked
- 1 ltr Milk
- 1/2 cup Date Jaggery concentrated
Instructions
- Soak the pearl barley in water for 20 minutes. This helps soften the barley and reduce cooking time.
- In a large pot or saucepan, combine the soaked barley and milk. Bring the mixture to a gentle simmer over medium heat.
- Add the finely chopped carrots and raisins to the simmering milk and barley. Stir occasionally to prevent sticking.
- Continue to simmer the kheer, stirring occasionally, until the barley is cooked through and the mixture has thickened, about 30-40 minutes. The kheer should coat the back of a spoon.
- Stir in the grated coconut and ground cardamom. The cardamom adds a warm, aromatic flavor.
- Remove the kheer from the heat and let it cool slightly. Allowing it to cool slightly before adding the jaggery prevents the jaggery from hardening.
- Stir in the concentrated date jaggery until it is fully dissolved and evenly distributed. The kheer will have a rich, caramel-like sweetness.
- Serve the barley kheer warm or chilled. Garnish with a sprinkle of chopped nuts or extra coconut, if desired.
