Ingredients
 

For the Payasam

For the Garnish

  • 10 Almonds slivered or sliced
  • 5 Dates pitted and chopped for garnish

Instructions
 

Prepare the Almonds

  • Soak 20 whole almonds in hot water for 15-20 minutes, or until easily peeled. Peel and chop 10 almonds, reserving 10 for garnish.

Blend Date & Almond Paste

  • Pit and discard the pits from 6 dates (reserve 5 for garnish). Blend the chopped almonds and the pitted dates into a smooth paste using a little milk. Set aside.

Toast Oats and Cook Payasam

  • In a saucepan, toast the rolled oats over medium-high heat for 2-3 minutes, stirring constantly, until fragrant. Pour in 2 1/2 cups of milk and stir in the date-almond paste. Bring to a boil over medium heat, stirring occasionally to prevent sticking.

Add Jaggery and Simmer

  • Once boiling, reduce heat to low. Add the jaggery and stir until completely dissolved. Taste and adjust sweetness if needed.

Finish and Garnish

  • Stir in the cardamom powder. Remove from heat. In a small pan, toast the chopped almonds in the ghee until lightly golden brown. Stir into the cooked payasam.

Serve

  • Serve the Dates and Oats Payasam warm or cold, garnished with the reserved chopped dates and whole almonds.
