Ingredients
For the Quinoa
For the Tadka (Tempering)
- 1 tbsp Clarified Butter clarified butter; or vegetable oil
- 1 tsp Mustard Seeds rai
- 2 Chili Pepper dry; adjust to your spice preference, red
- 5 leaves Curry Leaves
- 1 tsp Chickpea split chickpeas
- 1 tsp Gram black, split black gram
Instructions
Prepare the Quinoa
- Wash the quinoa thoroughly under cold water until the water runs clear. Combine the rinsed quinoa, 1 cup of water, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until all the water is absorbed and the quinoa is cooked through. Fluff with a fork and set aside to cool.
Make the Tadka
- Heat the ghee in a small pan over medium heat. Add the mustard seeds and let them splutter. Add the dry red chilies and curry leaves; sauté for a few seconds until fragrant. Add the chana dal and urad dal, and sauté until golden brown and crispy. Remove from heat and set aside.
Assemble the Curd Quinoa
- In a large bowl, whisk together the yogurt and milk (if using) until smooth and creamy. Gently fold in the cooked quinoa, roasted peanuts, chopped cucumber, grated carrot, and chopped coriander.
Finish and Serve
- Pour the tadka over the curd quinoa mixture and gently stir to combine. Taste and adjust salt as needed. Serve immediately and enjoy!
