Chow chow is a popular and widely available vegetable in Bangalore. A simple koottu made of chow chow and carrots is a perfect accompaniment to a South Indian lunch.

Ingredients
  

  • Chow chow and carrot - 1 each cut into small cubes
  • Green chillies -2
  • Moong dal - 1/2 cup
  • Fresh coconut grated- 1/3 cup
  • Red chillies -2
  • Urad dal - 1 tsp
  • Black pepper - 3-4
  • Cumin seeds - 1 tsp
  • Mustard seeds to temper - 1 tsp
  • Hing - 1/2 tsp
  • Water as required
  • Salt
  • Oil - 3 tsp
  • Curry leaves - 1 sprig

Instructions
 

  • Cut the chow and chow and carrot into cubes and boil in a pan with water. Add salt and green chillies. It usually gets cooked in 20 minutes. Keep it aside.
  • Soak the moong dal in water for 10 minutes and pressure cook it till softly cooked.
  • Heat oil in a small pan. Add red chillies, cumin seeds, urad dal and black pepper and cook till light brown. Now add the coconut and put off the gas. Once cooled, grate it in a mixer with water till a paste is formed. Keep it aside.
  • Add the moong dal and the coconut paste to the cooked chow chow and carrot and mix well.
  • Cook it for another 10 minutes as everything comes to a boil and mixes well.
  • Heat oil in a small kadai. Add mustard seeds, hing and curry leaves. Once they splutter, add to the chow chow mixture. Your koottu is ready.
