Ingredients
- 1 cup Maize Flour yellow cornmeal or
- 1 cup All-Purpose Flour maida
- 1 cup Buttermilk
- 3 Eggs
- 1/2 tsp Salt or as per taste
- 1/2 cup Butter melted
- 1/4 cup Sugar th
- 1 Chilli green, jalapenos finely chopped or local
- 1 Bell Peppers green, or pepper or red bell pepper chopped
- 1 Onion chopped, large sized
- 1 cup Corn Kernels fresh or frozen
- 2 tbsp Baking Powder
- 1 tbsp Olive Oil
- 1 cup Cheddar Cheese or mozzarella shredded mozzarella or
Instructions
- Combine both the flours with baking powder in a wide mixing bowl at first.
- Grease a baking dish and preheat the oven on 200°.
- Beat the eggs with sugar and butter. Stir in the salt and buttermilk.
- Add this liquid mix to the flour mix and add the veggies now.
- Bring all that together carefully taking enough care not to over mix. The batter would be slightly lumpy.
- Pour this batter in the baking dish and pop it in the oven for 25 to 30 minutes.
- Soft and super spongy cornbread is ready to be served. Enjoy it with your family and friends on it's own or as an accompaniment with your favourite tea or coffee.
