About Cheesy Mexican Cornbread

Native Americans have been making cornbread from ground corn for thousands of years, long before Europeans arrived. This beloved staple found its home in the Southern regions of America, where corn is treasured like gold. In this irresistible variation, classic cornbread gets a flavorful twist with the addition of gooey cheese and colorful veggies, taking its taste and texture to heavenly new heights.
The sharp kick from green chillies adds a lively touch to this cheesy Mexican cornbread, but you can easily omit them or swap in local green chilies for jalapeños, just as I did. Enjoy it warm from the oven, perfectly delicious on its own, or as a vibrant addition to your brunch, dinner, or snack spread. Try baking this delightful bread for your family and revel in its enticing flavor and pleasing crumb—happy baking, everyone!

Recipe Notes

Additional Tips

  • For extra flavor and texture, fold in a handful of sautéed onions or roasted corn kernels before baking; this adds a subtle sweetness and a pleasant bite that complements the cheese.
  • If you like a smoky touch, swap part of the cheese for a smoked variety such as smoked cheddar or pepper jack, or add a teaspoon of chipotle powder to the batter.
  • To create a crispy golden crust, preheat your baking dish (especially if using a cast iron skillet) with a little butter or oil in the oven before adding the batter.
  • Leftovers can be sliced and pan-toasted the next day; top with a dollop of sour cream, salsa, or avocado for a savory breakfast or snack.
