Cheesy Mexican Cornbread

Native Americans have been using ground corn before Europeans for making cornbread since thousands of years. The cornbread has been a popular one in the Southern regions of America where corn is considered as gold. This version of cornbread is a modified one with the addition of cheese and veggies. It tastes so very heavenly and can be very well eaten on it's own. Green chillies render a little sharp touch to the whole bread and can be very well omitted. Jalapenos can be replaced with our local green chillies as i did. Try this awesome bread for your families and relish it's enticing flavour and texture.Happy Baking People !!!!

  • 1 cup Yellow cornmeal or maize flour
  • 1 cup All purpose flour
  • 1 cup Buttermilk
  • 3 egg
  • 1/2 tsp Salt
  • 1/2 cup melted Butter
  • 1/4 th cup sugar
  • Jalapenos finely chopped 1 or local green chillies 2
  • 1 Green bell pepper or red bell pepper chopped
  • 1 Onion large chopped
  • 1 cup Corn kernels fresh or frozen
  • 2 tbsp baking powder
  • 1 tbsp Olive oil
  • 1 1/2 cup Shredded Mozzarella or Cheddar Cheese


  • Combine both the flours with baking powder in a wide mixing bowl at first.
  • Grease a baking dish and preheat the oven on 200°.
  • Beat the eggs with sugar and butter. Stir in the salt and buttermilk.
  • Add this liquid mix to the flour mix and add the veggies now.
  • Bring all that together carefully taking enough care not to over mix. The batter would be slightly lumpy.

  • Pour this batter in the baking dish and pop it in the oven for 25 to 30 minutes.

  • Soft and super spongy cornbread is ready to be served. Enjoy it with your family and friends on it's own or as an accompaniment with your favourite tea or coffee.
