Cheesy Mexican Cornbread

Native Americans have been using ground corn before Europeans for making cornbread since thousands of years. The cornbread has been a popular one in the Southern regions of America where corn is considered as gold. This version of cornbread is a modified one with the addition of cheese and veggies. It tastes so very heavenly and can be very well eaten on it's own. Green chillies render a little sharp touch to the whole bread and can be very well omitted. Jalapenos can be replaced with our local green chillies as i did. Try this awesome bread for your families and relish it's enticing flavour and texture. Happy Baking People !!!!!!!

Ingredients
- Yellow cornmeal or maize flour 1 cup
- All purpose flour 1 cup
- Buttermilk 1 cup
- Eggs 3
- Salt 1/2 tsp
- Sugar 3/4 th cup
- Butter 1/2 cup
- Jalapenos finely chopped 1 or local green chillies finely chopped 2
- Green bell pepper or red bell pepper chopped 1
- Onion chopped large 1
- Corn kernels fresh or frozen 1 cup
- Baking powder 4 tsp
- Olive oil 1 tbsp
- Shredded Mozzarella or Cheddar Cheese 1 1/2 cups

Instructions
- Combine both the flours with baking powder in a wide mixing bowl at first. Grease a baking dish and preheat the oven on 200°. Beat the eggs with sugar and butter.
- Add in the salt. Pour in the buttermilk now. Add this liquid mix to the flour mix and add the veggies now. Bring all that together carefully taking enough care not to over mix.
- The batter would be slightly lumpy. Pour in this batter in the baking dish and pop it in the oven for 25 to 30 minutes. Soft and super spongy cornbread is ready to be served.
- Enjoy it with your family and friends on it's own or as an accompaniment with your favourite tea or coffee.
