  • 2 cup Gram Flour besan, gram flour. ensure it's finely ground for a smoother texture.
  • 1 cup Jaggery finely grated or powdered for easier mixing. adjust to your desired sweetness level., use good quality jaggery
  • 1 tsp Cardamom finely ground cardamom powder for a more intense flavor. freshly ground is best.

Wet Ingredients

  • 1/2 cup Clarified Butter clarified butter. use good quality desi ghee for the best flavor and texture.
  • 1/4 cup Water may need slightly more or less depending on the jaggery's moisture content.

Preparing the Besan

  • Dry roast the chickpea flour (besan) in a heavy-bottomed pan or kadai over medium heat, stirring continuously until it turns light golden brown and releases a nutty aroma. This step is crucial for the ladoo's texture.

Combining Ingredients

  • Remove the roasted besan from the heat. Add the grated jaggery and cardamom powder. Mix thoroughly to combine.

Adding Ghee and Water

  • Gradually add the desi ghee, stirring constantly to prevent lumps. If the mixture is too dry, add water, a tablespoon at a time, until it comes together smoothly and forms a soft dough. The dough should not be sticky.

Shaping the Ladoos

  • Allow the mixture to cool slightly. Once it's cool enough to handle, take small portions of the mixture (about a tablespoon) and roll them into small balls. Shape them into round laddoos.

Serving and Storage

  • Serve the Besan Ladoos immediately or store them in an airtight container at room temperature. They will stay fresh for several days.
