  • Heat the desi ghee in a heavy-bottomed pan or kadai over medium heat. Once hot, add the gram flour (besan) and stir continuously with a strong spoon or spatula to prevent burning.

Roast the Besan

  • Reduce the heat to low and continue roasting the besan, stirring constantly, until it turns a light golden brown and a fragrant nutty aroma develops. This process takes about 10-15 minutes, and careful attention is needed to ensure even roasting.

Prepare the Sugar Mixture

  • While the besan is roasting, finely grind the sugar and almonds together in a spice grinder or food processor. Remove the seeds from the cardamom pods and grind them finely as well.

Combine and Shape

  • Remove the roasted besan from the heat and let it cool slightly. Add the ground sugar and almond mixture and finely ground cardamom powder. Mix thoroughly until well combined.

Form the Laddoos

  • Once the mixture is cool enough to handle, take small portions (about 1.5-2 tablespoons) and roll them into round balls (laddoos). Use your palms to shape the laddoos.
