Instructions

Prepare the Gram Flour

  • Sift the gram flour (besan) through a fine-mesh sieve to remove any lumps and set aside.

Toast the Gram Flour

  • Heat a heavy-bottomed pan or wok over medium heat. Add the ghee and let it melt completely.
  • Add the sifted gram flour to the melted ghee. Stir continuously with a wooden spoon or spatula, ensuring no lumps form and the flour is evenly coated with ghee.
  • Continue stirring for 8-10 minutes, or until the mixture turns light golden brown and a fragrant aroma develops. Remove from heat.

Mix in the Flavorings

  • Add the cardamom powder to the warm gram flour mixture. Mix well to combine the flavors.

Incorporate the Sugar

  • Allow the mixture to cool slightly until it's warm enough to handle. Add the powdered sugar and mix thoroughly until it is well incorporated.

Shape the Ladoos

  • Lightly grease your palms with ghee. Take a small portion of the mixture (about 1-2 tablespoons), roll it into a ball, and gently shape it into a round ladoo.
  • Repeat the process until all the mixture is used up.

Garnish and Serve

  • Garnish the ladoos with chopped pistachios. Serve immediately or store them in an airtight container at room temperature for up to a week.

Recipe Notes

Expert Tips for Perfect Besan Ladoo

  • Use good quality ghee for the best flavor and aroma.
  • Stir the gram flour continuously to prevent burning and ensure even toasting.
  • Don't add the sugar until the mixture has cooled slightly to prevent it from dissolving.
  • If the mixture is too dry to roll into ladoos, add a teaspoon of warm milk or ghee at a time until it reaches the desired consistency.
