Instructions

  • First prepare dough by taking 1 cup wheat flour, 1 teaspoon oil and salt in a small bowl. Incrementally add water in small quantities and knead smooth and soft dough (like chapati dough). Grease its surface with 1/2 teaspoon oil, cover it with clean.
  • Now, prepare alu paratha stuffing. Take the boiled potatoes in a medium bowl and mash it until no chunks of potato. Add chopped green chillies, salt, red chilli powder, garam masala powder and coriander leaves.
  • Divide stuffing into 6 equal parts and give them a shape of ball. Divide prepared dough into 6 equal parts and give them a round shape and press a little to flatten like pattie.
  • Take 1/2 cup wheat flour for dusting. Take 1 dough pattie n coat it with dry wheat flour(it will prevent dough sticky to rolling board). Roll it on rolling board. Roll it out into a circle of approximately 4.5 inch diameter.
  • Wrap stuffing by lifting all the sides and seal the edges and again roll it gently.
  • Place it on tawa.cook over medium flame. Reduce flame to low flip it n again cook over medium flame. Apply ghee on both the sides. Repeat flip n press process until golden brown spots appear on both the sides.

Recipe Notes

Mash potatoes properly and weed out chunks, if any. This will help rolling out smoothly
