Delicious Carrot and Tomato Tamarind Rice

Carrot and tomato tamarind rice are one of the varieties of tamarind rice which can be prepared during festivals and other special occasions celebrated with family.

Ingredients
  

  • 2 cups rice

Ingredients For Tamarind Rice Paste

  • 1 tomato small, chopped into small pieces
  • 1 carrot small, chopped into small pieces
  • 4 Green chilies spilt into halves
  • 5 Curry leaves
  • 1/2 Onion cut into pieces
  • 1 teaspoon Urad dal
  • 1 teaspoon Chana dal
  • 1 teaspoon Jeera
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Coriander Powder
  • 3 tbsp Oil
  • 1 Tamarind small lemon size
  • 1 cup Water small cup

Ingredients for final process

  • 5 Curry leaves
  • 1 teaspoon Urad dal
  • 1 teaspoon Chana dal
  • 1 teaspoon Jeera
  • 1 teaspoon Salt optional
  • Tamarind Rice Mixture
  • 2 Red Chilies
  • 1/2 teaspoon Jaggery Powder optional
  • Rice White

Instructions
 

Preparation of Tamarind rice paste

  • Switch on the stove, keep the pan and Keep it on medium flame and add three tablespoons of oil
  • Add a pinch of Hing (Asafetida)
  • Add a Few Curry Leaves
  • Add One teaspoon of mustard seeds, Urad Dal, Channa Dal, Jeera and Methi Seeds
  • Add 4 Green Chilies and Stir for sometime
  • Add Chopped Onion(Half Onion) and Stir for sometime
  • Add Chopped Tomato and Carrort and Mix them thoroughly
  • Add One Teaspoon of Salt, Turmeric Powder and Chili Powder Mix it thoroughly
  • Add Half a Teaspoon of Coriander Powder
  • Mix it thoroughly and close the lid for 2 minutes
  • Add Tamarind water along with the Tamarind
  • Stir it well until the flavour spreads evenly
  • At this stage check if everything is perfect otherwise we can add salt or chilli powder accordingly as per your preference.
  • Transfer the mixture to the mixer jar or Blender
  • Once it cools down then blend it into a smooth paste

Rice Preparation

  • Get a Nice Color for our Carrot and Tomato Tamarind Rice
  • Add Half a Tablespoon of ghee
  • Add One Teaspoon of Turmeric Powder
  • Mix Well until the Turmeric Powder and ghee Spreads evenly

Final Process

  • Switch on the stove, keep it on medium flame.
  • Keep the pan and add three tablespoons of oil.
  • Add half a teaspoon of mustard seeds, chana dal, urad dal, red chilies and curry leaves.
  • Fry for some time and then the carrot and tomato tamarind rice paste stir for some time.
  • Switch off the stove.

Completion

  • Add the carrot and tomato tamarind rice mixture to the rice
  • Mix well
  • Carrot and tomato tamarind rice is ready to serve with dry roasted peanuts /cashew nuts
