Watermelon Gazpacho

Gazpacho is a Spanish Cold soup made of raw vegetables, fruits and served cold, originating in the Southern Spanish. Gazpacho is widely eaten in Spain and neighboring Portugal. It is cool and refreshing drink in hot summers, includes bread, olive oil, tomato, garlic with the addition of vinegar. Now a days many modern varieties of Gazpacho are made in different colors and omitting the tomatoes. Summers are full of fresh and juicy fruits like watermelon, oranges, so I also thought to make my version of Gazpacho with high water content using watermelon, juicy, full of vitamin A, C potassium, pectin, calcium oranges, mint/herbs best coolant, basil (also a coolant). It's easy and no cook recipe with lots of fruits and veggies, great way to serve daily fruits and veggies in one servings.

Ingredients
  

  • 2 heaped cups of seedless watermelon
  • 1 teaspoon lemon juice
  • 1 small beetroot Peel and grated
  • 1 medium size tomato
  • 1 handful mint leaves wash and chopped
  • 1 tbsp Olive oil
  • 1 teaspoon apple cider vinegar
  • Rock/sea salt to taste
  • 1 pinch of cayenne/sweet pepper powder
  • 1 fresh Orange juice squeeze
  • 1 tbsp basil seeds
  • 1 english cucumber peel and chopped finely
  • 1/2 inch ginger peeled and chopped

Instructions
 

  • First soak basil seeds in a bowl for 10 minutes. Keep it aside..
  • In a blender add watermelon, orange juice, tomato, mint leaves, grated beetroot, lemon juice, olive oil, salt, cayenne pepper, vinegar ginger and grind it till smooth.
  • Sieve it. Keep it in freezer if needed. In two empty glasses add soaked basil. Add chilled liquid mixture (we prepared above) over it. Garnish it with chopped cucumber and mint leaves. Serve chilled.

Notes

Better to use seedless watermelon. Serve chilled, it tastes awesome. Adjust sweetness. Can add more veggies and fruits of your choice.
