Ingredients
  

  • ½ cup Sweet potato chopped
  • ½ cup Yam (purple) chopped
  • ½ cup Potato
  • 4 brinjal Small sized
  • ½ cup green peas
  • ½ cup carrot
  • ½ cup pegion peas
  • 1 cup broad beans
  • ½ cup Green garlic mint chopped
  • ½ cup green coriander chopped
  • 1 Green chili chopped
  • ½ cup Coconut grated
  • 1 tablespoon Raisins
  • 2 rajasthani chili
  • teaspoon Turmeric powder
  • 1 tablespoon Garam masala powder
  • Salt
  • Sugar to taste
  • 1 tablespoon oil
  • 1 tablespoon ginger chopped
  • 1 banana
  • 1 tablespoon Lemon juice
  • Water required
  • 1 tablespoon sesame seeds

Methi balls Ingredients

  • ½ cup methi leaves finely chopped
  • 1 cup besan
  • ½ cup wheat flour
  • 2 teaspoon Salt or as per taste
  • 1 teaspoon sugar
  • 1 tablespoon Lemon juice
  • 1 tablespoon oil
  • Water as required
  • ½ teaspoon turmeric powder
  • 2 teaspoon coriander powder
  • 1 tablespoon sesame seeds
  • 2 teaspoon chilly powder

Method for methi balls

  • Mix well all ingredients and make a dough. And make small sized balls

Method for Undhiyu

  • In a bowl, cut all root and vegetables in small piece and mix well.
  • In another bowl make masala by adding finely chopped coriander, green garlic, methi leaves, ginger, turmeric powder, garam masala powder, grated coconut, salt, sugar, raisins, sesame and oil and mix well.

  • In this masala marinate all roots and vegetables for 15 min. Stuff masala in brinjal and Rajasthani chili. After 15 min. in a microwave safe bowl add marinated vegetable and methi balls add 1 cup water and microwave it for 6 min.

  • After 6 min. mix the vegetables and again add hot water and microwave it for 6 min. In 20 min. undhiyu will be ready in microwave.
