Ingredients
- ½ cup chopped sweet potato
- ½ cup chopped purple Yaam
- ½ cup potato
- 4 Small sized brinjal
- ½ cup green peas
- ½ cup carrot
- ½ cup pegion peas
- 1 cup broad beans
- Green garlic mint chopped ½ cup
- green coriander chopped ½ cup
- Green chilly chopped 1 tbsp
- Coconut grated ½ cup
- Raisins 1 tbsp
- 2 rajasthani chilly
- Turmeric powder 2 tsp
- Garam masala powder 1 tbsp
- Salt
- Sugar to taste
- 1 tbsp oil
- 1 tbsp chopped ginger
- 1 banana
- Lemon juice 1 tbsp
- Water required
- 1 tbsp sesame
- Methi balls Ingredients – 1) ½ cup methi leaves finely chopped
- 1 cup besan
- ½ cup wheat flour
- Salt
- sugar 1 tsp
- Lemon juice 1 tbsp
- oil 1 tbsp
- Water as required
- turmeric powder ½ tsp
- coriander powder 2 tsp
- sesame seeds 1 tbsp
- chilly powder 2 tsp

Instructions
- Method for methi balls – Mix well all ingredients and make a dough. And make small sized balls. Method for Undhiyu – In a bowl , cut all root and vegetables in small piece and mix well.
- In another bowl make masala by adding finely chopped coriander green garlic, methi leaves, ginger, turmeric powder, garam masala powder, grated coconut, salt, sugar, raisins, sesame and oil and mix well.In this masala marinate all roots and vegetabl
- for 15 min. Stuff masala in brinjal and Rajasthani chilly.After 15 min. in a microwave safe bowl add marinated vegetable and methi balls add 1 cup water and microwave it for 6 min
- After 6 min. mix the vegetables and again hot water and microwave it for 6 min. In 20 min. undhiyu will be ready in microwave.
