Mutton Ghee Roast is a very popular side dish of South India. It is a beautifully flavored dish cooked in ghee, freshly grounded masala and spices. The aroma and taste is amazing. A perfect side dish.

Ingredients
  

  • 400 gm Mutton
  • 1 teaspoon Peppercorns
  • 3 Green Chilies chopped
  • 1 inch Ginger chopped
  • 6 cloves Garlic chopped
  • 1 teaspoon Lemon juice
  • 1 stick Cinnamon small stick
  • 2 Cardamom
  • 3 Cloves
  • 1 Star Anise small piece
  • 3 Dry Red Chilly whole
  • ½ teaspoon cumin seed
  • 2 Onion medium, finely chopped
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Chilly powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Fennel powder
  • 1 Tomato large, finely chopped
  • 1 cup Water or as required
  • 1 sprig Curry Leaves
  • Salt to taste
  • 3 tbsp Ghee
  • ¼ cup Coriander leaves chopped

Instructions
 

  • Grind together peppercorns, green chilli, ginger, garlic with little water to a fine paste.
  • Add the ground masala, lemon juice and salt to cleaned mutton pieces. Marinate it for 30 mins to 1 hour.
  • Take the pressure cooker and add the marinated mutton and 1 cup of water. Pressure cook for 10 mins. Let the pressure release by itself. Open the cooker and if there is any liquid, evaporate it completely.
  • Heat ghee in a pan. Add the whole spices, red chillies, curry leaves and saute for a min.
  • Add the sliced onions and cook till it turns soft. Add the tomato and saute till it turns mushy.
  • Add all the masala powders and salt if required and fry for a min.
  • Add the cooked mutton, stir and mix well coating the mutton with the masalas and roast on low heat for about 5 mins stirring frequently.
  • Increase the flame to medium-high heat and roast further stirring frequently for about 10 mins.
  • Add chopped coriander leaves, give a quick stir and take off the heat.
  • Garnish with more coriander leaves and serve.
