Amaranth Leaves Chutney
Amaranth leaves: Amaranth leaves cleanse the blood toxins, improves digestion, strengthens heart muscles, it also lower the blood cholesterol. I generally make with moong Dal however as subzi I tried it for the first time as I saw on the Internet. It tastes yum. Eat with boiled rice as a side dish

Ingredients
- 2 cup Amaranth leaves roughly cut
- 1/4 teaspoon cumin seed
- 1 Red Chillies
- 2-3 Green Chillies
- 2 tbsp Sesame seeds
- 1 Tamarind small ball
- 3-4 cloves Garlic
- Salt to taste
For Tempering
- 5-6 Curry leaves optional
- 1-2 teaspoon Mustard seeds

Instructions
- Wash leaves and cut it roughly, soak tamarind in little water
- Heat little oil, add red chili and jeera. Roast it. Add sesame seeds and roast. In the end add grated coconut and remove from fire.
- Heat little oil add garlic and green chili. Fry for a minute. Add Amaranth leaves and sauté till leaves becomes soft.
- Remove from fire and cool it. Grind all the roasted ingredients along with tamarind into coarse paste. Add salt, temper with curry leaves and mustard seeds.
- Chutney is ready
